Oaksmere Deisgn have had the opportunity to provide our services to a leading butcher based in Coventry. Aubrey Allen is a high-end butcher supplying premium quality meats to the hotel and leisure industry and, with their Royal Warrant, to the Royal households. The project was progressed as follows: -

Client Brief…
Aubrey Allen sought to expand their operation into a new facility across the road from their Coventry headquarters. This would contain a suite of five maturation rooms and a classroom for training and demonstration purposes during phase 1. A bacon processing suite which would include a blast freezer, a conditioning chiller, a conditioning freezer and a temperature-controlled preparation area was also introduced during phase 2.

Installation…
The first phase saw the installation of the maturation suite and classroom. The maturation rooms needed to have the ability to closely control both humidity and temperature, to provide a ‘best in class’ product. The control of both elements needed the facility to alter the temperature and humidity, to establish the most effective setpoints.

The second phase installed the bacon processing suite. This was predominantly operated by the same refrigeration plant supplied in phase 1, the only additional plant required was a small HFC condensing unit to run the conditioning freezer. Other elements of the suite include a holding chiller, temperature-controlled prep area, and a blast freezer which can double as a conditioning freezer running at a different temperature using a dual suction pipework arrangement.

Design…
Oaksmere designed the refrigeration systems, inclusive of the gravity / pumped drainage solution, control & alarm system, de-humidification & humidification control systems and leak detection protection, as well as supplying all of the refrigeration plant, coldrooms, coldroom equipment and carrying out the refrigeration, mechanical and electrical engineering installations.

Operation…
The design intention was to control the temperature and humidity by using the refrigeration system. Due to the way the maturation process works, there is very little refrigeration load to force the equipment to operate and therefore control the humidity. To combat this and avoid the need for complicated and expensive de-humidification systems, Oaksmere designed, built, and installed bespoke heaters onto each of the stainless-steel evaporators. This keeps the refrigeration system running by imposing a false load and provides precise control over humidity levels. Humidifiers were installed in each of the rooms for when humidity drops too low.

Completion…
The project was completed on time and to a strictly controlled budget with the customer being extremely pleased with project outcomes (reference testimonial on this website). With the intelligence provided by the selected control system the client is able to adjust both the humidity and temperature to be able to understand the optimum of both.
